  • 1 1/2 cups whole wheat flour
  • 1/2 cup honey or maple syrup (optional, depending on desired sweetness)
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Optional add-ins: chopped nuts, chocolate chips, or dried fruit

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • In a bowl, mix mashed bananas, cottage cheese, eggs, sugar, melted butter, and vanilla.
  • In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  • Combine wet and dry ingredients, mixing gently.
  • Fold in walnuts or chocolate chips if desired.
  • Pour batter into the loaf pan and spread evenly.
  • Bake for 55-65 minutes, or until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.
