Description

A delicious, easy baked taco lasagne made without browning ground beef, perfect for a quick family dinner.

Ingredients

Scale
  • 6 large flour tortillas
  • 1 lb (450g) ground beef (or your preferred protein like ground turkey or plant-based crumbles)
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes (drained)
  • 1 cup sour cream
  • 1 can (4 oz) diced green chilies (optional, for extra flavor)
  • 1 cup black beans (optional, for added protein)
  • 1 small onion, finely chopped (optional)
  • 2 tbsp olive oil (for greasing the baking dish)
  • Fresh cilantro (for garnish, optional)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cut tortillas to fit the dish and layer them on the bottom.
  • In a bowl, mix ground beef, taco seasoning, tomato sauce, and diced tomatoes.
  • Spread half of the meat mixture over the tortillas, then sprinkle with half of the cheese.
  • Add another layer of tortillas, followed by the remaining meat mixture and cheese.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
  • Let rest for 5-10 minutes, garnish with cilantro, and serve.

Notes

  • Protein Alternatives: You can swap the ground beef for ground turkey, chicken, or a vegetarian option like black beans or lentils.
  • Taco Seasoning: If you prefer, you can make your own taco seasoning by combining chili powder, cumin, garlic powder, onion powder, paprika, and salt. Adjust the seasoning to taste!
  • Make Ahead: This recipe is perfect for meal prep! Assemble the lasagne the night before, refrigerate it, and bake it the next day.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
  • Spicy Version: For a spicier dish, add diced jalapeños or increase the chili powder in your taco seasoning.
