Ingredients
Scale
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup plain kefir
- Pinch of salt
Instructions
- Preheat: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch sheet pan.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix well. Stir in vanilla extract.
- Combine Kefir and Dry Ingredients: Gradually add the kefir and the dry ingredients to the wet mixture, alternating between them, starting and ending with the dry ingredients. Mix until just combined.
- Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let the cake cool completely before frosting or serving.
Notes
- For a lighter texture, make sure your ingredients (especially butter and eggs) are at room temperature.
- You can customize the cake by adding berries, chocolate chips, or citrus zest.
- Ensure the cake is fully cooled before frosting to prevent the frosting from melting.
