Kefir Sheet Cake

  • Author: Kylie
  • Total Time: 40 mins
  • Yield: 12 slices 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain kefir
  • Pinch of salt

Instructions

  • Preheat: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch sheet pan.
  • Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream Butter and Sugar: In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, and mix well. Stir in vanilla extract.
  • Combine Kefir and Dry Ingredients: Gradually add the kefir and the dry ingredients to the wet mixture, alternating between them, starting and ending with the dry ingredients. Mix until just combined.
  • Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and Serve: Let the cake cool completely before frosting or serving.

Notes

  • For a lighter texture, make sure your ingredients (especially butter and eggs) are at room temperature.
  • You can customize the cake by adding berries, chocolate chips, or citrus zest.
  • Ensure the cake is fully cooled before frosting to prevent the frosting from melting.
