  • Author: Kylie
  • Total Time: 15 min
  • Yield: 2 cup 1x

Ingredients

Scale
  • ½ cup lotus seeds (dried or fresh)
  • 2 cups water
  • 1 tbsp raw honey (or to taste)
  • ½ tsp vanilla extract (optional)
  • ½ cup milk (dairy or plant-based, optional)
  • 12 dates (for extra natural sweetness, optional)

Instructions

  • Soak or Boil Lotus Seeds: If using dried lotus seeds, soak them in warm water for 3-4 hours or boil them for 15 minutes until soft.
  • Blend the Ingredients: In a blender, add lotus seeds, water, and dates (if using). Blend until smooth.
  • Strain (Optional): If you prefer a smoother texture, strain the mixture using a fine mesh sieve.
  • Heat the Drink: Pour the blended mixture into a saucepan and warm it over low heat, stirring occasionally. Avoid boiling.
  • Add Honey & Vanilla: Remove from heat and stir in honey and vanilla extract for extra flavor.
  • Serve & Enjoy: Pour into a cup, optionally mix in milk, and enjoy warm or chilled.

Notes

  • Adjust Sweetness: You can add more honey or dates depending on your preferred level of sweetness.
  • Make It Creamier: Use almond milk, oat milk, or coconut milk for a richer texture.
  • Chilled Version: Refrigerate for 2-3 hours and serve cold for a refreshing summer drink.
  • Storage Tip: Store in an airtight container in the fridge for up to 2 days. Shake before drinking.
