Main Ingredients
  • 1 bunch Fresh asparagus spears Select firm spears for best texture.
  • 1 lb Thinly sliced steak (such as flank or sirloin) Marinate for enhanced flavor.
Seasonings & Liquids
  • 1 tsp Garlic powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 tbsp Olive oil For sautéing or grilling.
  • 1 tbsp Fresh lime juice For flavor enhancement.
Optional Ingredients
  • 1 cup Bell peppers or onions For additional flavor.
  • 4 pieces Tortillas Optional as a base.

Method

Preparation
  1. Prepare all your ingredients and any necessary equipment on your countertop.
  2. Season the sliced steak with garlic powder, cumin, paprika, and a drizzle of olive oil, allowing the flavors to meld for about 30 minutes.
Cooking
  1. Heat a skillet over medium-high heat and add the marinated steak, cooking for a few minutes on each side until it reaches your desired doneness.
  2. As the steak rests, lightly blanch the asparagus in boiling water for just 2-3 minutes to maintain its vibrant color and slight crunch.
  3. Remove and cool them quickly in an ice bath to ensure they stay bright and fresh.
Assembly
  1. Assemble your roll-ups by placing a slice of steak and 2-3 asparagus spears together.
  2. Roll them tightly, securing with toothpicks if necessary.
  3. If using, warm tortillas lightly on the grill or in a dry pan, laying the roll-ups on for added flavor.
  4. Garnish with fresh lime juice and herbs, serving them with your favorite dipping sauce.

Notes

For a smoky flavor, grilling on a charcoal grill adds a wonderful depth. Ensure not to overcook the asparagus for enhanced texture.
