Ingredients
  

Base Ingredients:

  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced

Fresh Vegetables:

  • 1 carrot diced
  • 1 zucchini diced
  • 1 bell pepper chopped
  • 1 cup cherry tomatoes halved

Protein Options (Choose One):

  • 1 cup shredded chicken
  • 1 can chickpeas drained
  • 1 cup tofu cubed

Seasonings & Herbs:

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • Fresh parsley for garnish

Optional Toppings:

  • Grated Parmesan cheese
  • Croutons or toasted bread
  • A drizzle of lemon juice

Instructions
 

  • Heat a pot with a bit of oil and sauté diced vegetables until tender.
  • Add broth, bring to a simmer.
  • Add leafy greens and protein, cook until the greens are wilted and protein is heated.
  • Season with salt, pepper, and herbs.
  • Serve hot, enjoy!
