Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup cooked rice
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • ½ cup corn optional
  • ½ cup black beans optional
  • 1 lime cut into wedges
  • Fresh cilantro for garnish

Instructions
 

  • Sauté: Heat olive oil in a pot over medium heat. Sauté onion and garlic until soft.
  • Simmer: Add broth, tomatoes, spices, and cooked chicken. Simmer for 15 minutes.
  • Add Rice: Stir in cooked rice, corn, and black beans. Simmer for another 5 minutes.
  • Serve: Ladle into bowls, garnish with cilantro, and serve with lime wedges.
