- 4 chicken thighs or breasts skinless, boneless
- 2 tbsp olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 tbsp aji amarillo paste
- 1 cup chicken broth
- 1 cup evaporated milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Heat olive oil in a pan over medium heat. Cook the chicken until browned, then set aside.
In the same pan, sauté the onion and garlic until soft.
Add the aji amarillo paste, chicken broth, and evaporated milk. Stir and bring to a simmer.
Return chicken to the pan, season with salt and pepper. Let simmer until the chicken is fully cooked.
Garnish with cilantro and serve.
- Use chicken breasts for leaner meat.
