Ingredients
  

  • 4 chicken thighs or breasts skinless, boneless
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tbsp aji amarillo paste
  • 1 cup chicken broth
  • 1 cup evaporated milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a pan over medium heat. Cook the chicken until browned, then set aside.
  • In the same pan, sauté the onion and garlic until soft.
  • Add the aji amarillo paste, chicken broth, and evaporated milk. Stir and bring to a simmer.
  • Return chicken to the pan, season with salt and pepper. Let simmer until the chicken is fully cooked.
  • Garnish with cilantro and serve.

Notes

  • Use chicken breasts for leaner meat.
  • Adjust the level of spice with more or less aji amarillo paste.
  • Leftovers can be stored in the fridge for up to 3 days.
