Ingredients
  

  • 4 medium russet potatoes baked & halved
  • 1 cup cottage cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • ½ cup shredded cheddar cheese
  • 1 tbsp chopped chives
  • Salt & pepper to taste
  • Olive oil spray

Instructions
 

  • Scoop out the potato flesh, leaving a thin layer inside.
  • Brush skins with olive oil, season with salt, and air fry at 400°F (200°C) for 8 minutes until crispy.
  • Mix cottage cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • Fill potato skins with the mixture, top with cheddar cheese, and air fry for 5 more minutes.
  • Garnish with chives and serve hot!

Notes

Use Greek yogurt for a tangier taste.
Swap cheddar for mozzarella or feta.
Best served fresh but can be reheated in the air fryer.
