Preparation
- Preheat your oven to 350°F (175°C). Grease and flour your loaf pan.
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes).
- Add the orange zest to the butter and sugar mixture.
- Add the eggs one at a time, mixing well after each addition.
- Stir in vanilla extract, sour cream, and orange juice until smooth.
- Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
- Fold in fresh cranberries and chopped dried cranberries.
Baking
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted in the center comes out clean.
- If the top browns too quickly, cover it loosely with aluminum foil.
Glazing
- While the bread is baking, prepare the glaze by whisking together the powdered sugar, orange juice, and orange zest until smooth.
- Once the bread has baked, cool it in the pan for about 10 minutes before transferring it to a wire rack.
- Allow it to cool completely before drizzling the glaze on top.
- Optional: Add extra orange zest on top for garnish.
Notes
Serve slices warm with butter, or as a delightful addition to brunch. Can also be toasted and served with cream cheese.
