Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together softened butter, cream cheese, vanilla extract, and egg until light and fluffy.
- Mix in the white cake mix until well combined and no dry patches remain.
- Divide the dough into separate bowls based on how many colors you want.
- Add food coloring to each bowl and mix until you achieve the desired brightness.
- Cover the bowls with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
Baking
- Roll the chilled dough into small balls, about 1-2 inches in diameter.
- Dip each ball into powdered sugar, ensuring they are well-coated.
- Place them on a greased cookie sheet or parchment-lined baking sheet, and gently flatten them.
- Bake in the preheated oven for about 10-12 minutes.
- While warm, add candy eyeballs on top.
- Let cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For added fun, set up a cookie station with different toppings. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
