  • 8 oz cream cheese, softened Ensure it's at room temperature
  • 1 large egg
  • powdered sugar For coating the cookie balls
  • food coloring (neon) To achieve desired color
  • candy eyeballs For decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat together softened butter, cream cheese, vanilla extract, and egg until light and fluffy.
  3. Mix in the white cake mix until well combined and no dry patches remain.
  4. Divide the dough into separate bowls based on how many colors you want.
  5. Add food coloring to each bowl and mix until you achieve the desired brightness.
  6. Cover the bowls with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
Baking
  1. Roll the chilled dough into small balls, about 1-2 inches in diameter.
  2. Dip each ball into powdered sugar, ensuring they are well-coated.
  3. Place them on a greased cookie sheet or parchment-lined baking sheet, and gently flatten them.
  4. Bake in the preheated oven for about 10-12 minutes.
  5. While warm, add candy eyeballs on top.
  6. Let cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For added fun, set up a cookie station with different toppings. Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
