Ingredients
  

Main Ingredients
  • 1 cup Giant couscous
  • 3 cups Fresh greens (spinach, kale, swiss chard) Feel free to experiment with different greens.
  • 1/4 cup Tahini The heart of the sauce.
  • 2 cloves Garlic, minced Freshly minced for depth of flavor.
  • 2 tbsp Lemon juice, freshly squeezed Adds brightness.
  • 2 tbsp Olive oil For sautéing.
  • to taste tsp Salt and pepper Essential seasonings.
Optional Ingredients
  • 1 cup Quinoa Can replace giant couscous for a gluten-free version.
  • 1/4 cup Nuts or seeds For additional crunch.

Method
 

Cooking the Couscous
  1. Bring a pot of salted water to boil. Add giant couscous and cook until al dente, approximately 10-12 minutes. Drain and set aside.
Sautéing the Greens
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add your greens and a pinch of salt. Cook until wilted, approximately 3-5 minutes.
Combining Ingredients
  1. In the skillet, combine the drained couscous with the sautéed greens.
  2. Stir in tahini and lemon juice, mixing until everything is well coated. Adjust seasoning with salt and pepper to taste.
Serving
  1. Transfer to a serving bowl and garnish with additional lemon wedges and a drizzle of olive oil.

Notes

For added umami flavor, incorporate sautéed mushrooms. A sprinkle of chili flakes can bring a delightful heat.
