Method
Cooking the Couscous
- Bring a pot of salted water to boil. Add giant couscous and cook until al dente, approximately 10-12 minutes. Drain and set aside.
Sautéing the Greens
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add your greens and a pinch of salt. Cook until wilted, approximately 3-5 minutes.
Combining Ingredients
- In the skillet, combine the drained couscous with the sautéed greens.
- Stir in tahini and lemon juice, mixing until everything is well coated. Adjust seasoning with salt and pepper to taste.
Serving
- Transfer to a serving bowl and garnish with additional lemon wedges and a drizzle of olive oil.
Notes
For added umami flavor, incorporate sautéed mushrooms. A sprinkle of chili flakes can bring a delightful heat.
