Preparation
- Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal.
- In a large bowl, mix the peanut butter, oats, honey, and a pinch of salt until well combined.
- Transfer the mixture into the prepared baking dish and press firmly to create an even layer.
- In a microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the oat mixture and spread it evenly using a spatula.
- Place the bars in the refrigerator for at least 2 hours to firm up. Once set, lift them out using the parchment paper and cut into squares.
Tips
- If you like textures, sprinkle some crushed nuts or seeds on top before the chocolate sets.
- If the mixture feels too sticky, add a bit more oats until you reach the desired consistency.
Notes
Store leftovers in an airtight container in the fridge for up to one week. Can be frozen tightly wrapped for up to three months.
