Ingredients
  

Chicken and Broth
  • 1 ½ lbs bone-in chicken thighs or drumsticks
  • 8 cups water or chicken broth
  • 1 chicken bouillon cube optional, for extra flavor
Flavor Base
  • 2 tbsp olive oil
  • cup sofrito homemade or store-bought
  • ½ onion chopped
  • ½ green bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and black pepper to taste
Vegetables & Noodles
  • 2 carrots peeled and sliced
  • 2 small potatoes peeled and diced
  • ½ cup fideos or broken spaghetti noodles
  • ¼ cup chopped cilantro optional
  • 1 tbsp tomato sauce or tomato paste optional

Method
 

  1. Boil chicken in water or broth with bouillon until cooked, then shred.
  2. In a skillet, sauté sofrito, onion, pepper, and garlic in olive oil.
  3. Add the sautéed mix, carrots, potatoes, and spices to the broth.
  4. Simmer for 10 minutes, then add noodles and cook until tender.
  5. Stir in cilantro and adjust seasoning before serving.

Notes

  • Use homemade sofrito for extra flavor.
  • Fideos noodles give it an authentic Puerto Rican touch.
  • Add a splash of lime juice before serving for brightness.
