Method
 

Preparation
  1. Prepare your ingredients by washing and chopping the vegetables: dice the onion and bell peppers, and mince the garlic.
  2. Heat the vegetable oil in a large soup pot or Dutch oven over medium-high heat.
Cooking
  1. Add the diced onions, green bell pepper, and yellow bell pepper. Sauté for 5-7 minutes until softened.
  2. Add the minced garlic for an additional minute.
  3. Introduce the ground turkey to the pot, breaking it apart and cooking until browned, about 7-10 minutes.
  4. Add the chicken broth, followed by the black beans, corn, pumpkin puree, diced tomatoes, chili powder, salt, and black pepper. Mix well.
Simmering
  1. Cover the pot, reduce heat to medium-low, and let it simmer for 20 minutes.
  2. Check the chili for thickness and aroma. Adjust seasonings if necessary.
Serving
  1. Serve in bowls, topping with cheddar cheese, sour cream, diced avocado, and cilantro as desired.

Notes

Allowing the chili to sit overnight enhances the flavor. Freezing portions for later use is recommended for convenience.
