Preparation
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a small bowl, mix together cubed apples, granulated sugar, flour, lemon juice, ground cinnamon, nutmeg, and a pinch of kosher salt.
- Using a pocket pie maker or a 4-inch cookie cutter, cut out 10 to 12 circles from the pie crust.
Assembly
- Spoon 1-2 tablespoons of the apple filling into the center of one dough circle.
- Top the filling with chopped caramel and sprinkle with flaky sea salt.
- Whisk together the egg with 1 tablespoon of water and brush the mixture around the edge of the dough circle.
- Place another dough circle on top and crimp the edges to seal the pies.
- Transfer the pies to the prepared baking sheets and brush tops with the remaining egg mixture. Cut small slits into the tops of each pie if not using a lattice cutter.
- Sprinkle sanding sugar on top before baking.
Baking
- Bake the hand pies in the preheated oven for 18 to 20 minutes until golden brown.
- Allow to cool on the baking sheets before serving.
Notes
These hand pies are best enjoyed warm or at room temperature. They can be served with a scoop of vanilla ice cream or drizzled with extra caramel sauce.
