Salted Caramel-Apple Hand Pies

Delightful hand pies filled with sweet apples and gooey caramel, wrapped in a flaky crust, perfect for any occasion.

Ingredients
  

For the filling
  • 2 pieces granny smith apples, cored, peeled, and cubed Choose firm apples for best texture.
  • ¼ cup granulated sugar
  • 2 teaspoons all-purpose flour
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 8 pieces soft caramels, roughly chopped
  • 2 tablespoons flaky sea salt For sprinkling on top.
For the crust
  • 2 packages store bought pie crusts You can also use homemade pie crust.
  • 1 large egg For egg wash.
  • Sanding sugar for sprinkling on top For decoration.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a small bowl, mix together cubed apples, granulated sugar, flour, lemon juice, ground cinnamon, nutmeg, and a pinch of kosher salt.
  3. Using a pocket pie maker or a 4-inch cookie cutter, cut out 10 to 12 circles from the pie crust.
Assembly
  1. Spoon 1-2 tablespoons of the apple filling into the center of one dough circle.
  2. Top the filling with chopped caramel and sprinkle with flaky sea salt.
  3. Whisk together the egg with 1 tablespoon of water and brush the mixture around the edge of the dough circle.
  4. Place another dough circle on top and crimp the edges to seal the pies.
  5. Transfer the pies to the prepared baking sheets and brush tops with the remaining egg mixture. Cut small slits into the tops of each pie if not using a lattice cutter.
  6. Sprinkle sanding sugar on top before baking.
Baking
  1. Bake the hand pies in the preheated oven for 18 to 20 minutes until golden brown.
  2. Allow to cool on the baking sheets before serving.

Notes

These hand pies are best enjoyed warm or at room temperature. They can be served with a scoop of vanilla ice cream or drizzled with extra caramel sauce.
