Preparation
- Preheat your oven to 375°F and line a baking sheet with foil or a non-stick liner.
- Wash the zucchini thoroughly, cut each zucchini in half lengthwise, and clean out the seeds.
- Place zucchini halves cut side up on the baking sheet and drizzle with olive oil.
- If the zucchini is at room temperature, bake for 5 minutes. If cold from the fridge, extend baking to 10 minutes.
Cooking the Filling
- Heat a skillet over medium heat and brown the Italian and pork sausages until fully cooked.
- Drain any excess fat from the skillet.
- Mix in the seasoned salt, black pepper, and granulated onion.
- Stir in the cream cheese and cheddar cheese until well combined and melted.
Stuffing and Baking
- Take the zucchini out of the oven and fill each half with the sausage and cheese mixture.
- Return them to the oven and bake for an additional 15 minutes.
- Sprinkle grated parmesan and mozzarella cheese on top and bake for an additional 5 minutes, or until melted.
Notes
For a variation, try using ground turkey or chicken instead of pork sausage. Consider adding vegetables like sautéed onions or mushrooms to the filling for added flavor.
