Ingredients
  

For the stuffed zucchini
  • 4-5 medium zucchini Choose fresh, firm zucchinis.
  • 2 teaspoons olive oil For drizzling on zucchini.
  • 0.5 pound Italian sausage
  • 0.5 pound pork sausage Use original seasoned breakfast sausage.
  • 0.5 teaspoon seasoned salt
  • 0.25 teaspoon black pepper Freshly ground.
  • 0.5 teaspoon granulated onion
  • 3/4 cup cheddar cheese Shredded.
  • 2 ounces cream cheese
  • 2 tablespoons grated parmesan cheese
  • 1 cup mozzarella cheese Shredded.

Method
 

Preparation
  1. Preheat your oven to 375°F and line a baking sheet with foil or a non-stick liner.
  2. Wash the zucchini thoroughly, cut each zucchini in half lengthwise, and clean out the seeds.
  3. Place zucchini halves cut side up on the baking sheet and drizzle with olive oil.
  4. If the zucchini is at room temperature, bake for 5 minutes. If cold from the fridge, extend baking to 10 minutes.
Cooking the Filling
  1. Heat a skillet over medium heat and brown the Italian and pork sausages until fully cooked.
  2. Drain any excess fat from the skillet.
  3. Mix in the seasoned salt, black pepper, and granulated onion.
  4. Stir in the cream cheese and cheddar cheese until well combined and melted.
Stuffing and Baking
  1. Take the zucchini out of the oven and fill each half with the sausage and cheese mixture.
  2. Return them to the oven and bake for an additional 15 minutes.
  3. Sprinkle grated parmesan and mozzarella cheese on top and bake for an additional 5 minutes, or until melted.

Notes

For a variation, try using ground turkey or chicken instead of pork sausage. Consider adding vegetables like sautéed onions or mushrooms to the filling for added flavor.
