Preparation
- Trim excess fat from the beef chuck roast and pat it dry with paper towels.
- In a small bowl, mix together salt, black pepper, ground cumin, dried oregano, and smoked paprika.
- Rub this spice mix all over the beef roast, covering all sides.
Cooking
- Place diced onion and minced garlic at the bottom of the slow cooker.
- Carefully place the seasoned beef chuck roast on top of the onions and garlic.
- Pour apple cider vinegar and lime juice over the roast.
- Add bay leaves and pour beef broth around the roast.
- Cover the slow cooker and cook on low for 8 to 10 hours or high for 4 to 6 hours.
- Remove the beef and shred it with two forks. Mix the shredded meat with the cooking liquid in the slow cooker.
