  • 3-4 pounds beef chuck roast Choose a well-marbled roast for better flavor.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 2 pieces bay leaves
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 1 cup beef broth Pour around the roast.
  • to taste chopped cilantro for garnish Optional garnish.

Method
 

Preparation
  1. Trim excess fat from the beef chuck roast and pat it dry with paper towels.
  2. In a small bowl, mix together salt, black pepper, ground cumin, dried oregano, and smoked paprika.
  3. Rub this spice mix all over the beef roast, covering all sides.
Cooking
  1. Place diced onion and minced garlic at the bottom of the slow cooker.
  2. Carefully place the seasoned beef chuck roast on top of the onions and garlic.
  3. Pour apple cider vinegar and lime juice over the roast.
  4. Add bay leaves and pour beef broth around the roast.
  5. Cover the slow cooker and cook on low for 8 to 10 hours or high for 4 to 6 hours.
  6. Remove the beef and shred it with two forks. Mix the shredded meat with the cooking liquid in the slow cooker.

Notes

Adjust seasoning with salt or lime juice before serving. This barbacoa is perfect for tacos, burritos, salads, or served over rice. Enhance flavor by drizzling cooking juices over servings.
