Preparation
  1. Preheat your oven to 375°F.
  2. Open the sweet potatoes and drain them in a colander.
  3. Transfer the sweet potatoes into a large mixing bowl and mash until smooth.
  4. Stir in brown sugar, softened butter, egg, and salt until fully blended.
Baking
  1. Spread the mixture evenly into a prepared baking dish.
  2. Bake for about 30 minutes, monitoring for doneness.
  3. Remove from oven and sprinkle mini marshmallows evenly on top.
  4. Return to oven and bake for an additional 8-10 minutes until marshmallows are golden brown.
